The Roaster's Set
Everything I brew with, in one set.
Dialing in a coffee takes years of knowledge and a lot of testing. This set is that testing, packed into one box: the same tools, water and methods I use on every BORRH roast, so you can taste it at home the way it tasted at the roaster.
In the set
Every piece has a job.
It may look like a lot. Each one changes something you can taste in the cup.
Gooseneck kettle
Set the temperature to the degree. The narrow spout controls how fast and where the water lands - pour too hard and the bed churns and turns bitter.
Hario Switch
Flip it up to hold the water, down to let it run. That extended bloom pulls more complexity out of the coffee - it is a method all over the world competition stage.
Flow diffuser
Spreads every pour evenly over the coffee bed. It rounds out a cup that runs uneven - on the Colombia it softens a pink-lemonade edge that can come on too strong.
Frozen ball stand
A tea set cut down to hold a frozen whiskey ball under the dripper. It catches aroma that would otherwise leave as steam on the first pour, so delicate florals come through.
1Zpresso Q Air grinder
Grind is one of the biggest things you can change about a cup. The best grinder for the money, with a starting setting given in every recipe.
Scale
Every recipe starts at 15 g of coffee. Weigh it, then follow the weights and timings in the recipe video pour by pour.
Brewing water kit
Magnesium, calcium, sodium and potassium drops with a ppm meter. A cup is mostly water, so build yours to my recipe - then taste it against plain water.
Filter weight and Hario filters
Fold the filter, set the weight on top, and it stays in place while you rinse and preheat. A small thing that makes every brew easier.
The cup
A Tokyo idea: thick on one side, thin on the other. The thick lip tastes sweeter, the thin one brighter and more acidic. Cups may differ from set to set.
